Source: Easy Cheesy Chicken

It’s been a while since Wedwand posted a recipe, so on this, the last Wednesday of September 2015, here’s a simple, yet delicious one for you.

I was gonna call this one “Easy Peasy Chicken’ but I opted not for two reasons:

1- Not really a fan of the phrase “easy peasy”. It just sounds so trite.

2- And, I could not find a stand-alone definition of the word ‘Peasy” other than this one offered by the Century Dictionary …”Lead ore in small grains about the size of peas.”

“Honey, what’s that cooking for dinner? It smells great!”
“Oh, just a little LEAD ORE. It’s got lots of iron in it. Good for your blood.”

Nope, not an ounce of heavy metal in this recipe. Sorry, Black Sabbath fans. Here we go.


1 Green pepper
1 Onion
6 Chicken Breasts sliced length wise in half to make them thinner
1 15oz can diced tomatoes, Basil, Garlic & Oregano seasoned if they got them
½ Cup shredded cheese (Mozzarella, or Italian Cheese blend or see below)
1/4 cup Sherry, or wine


Preheat oven to 375
Coat the pan with Olive oil

Slice the peppers and onions and layer atop the oil in the pan (I let them heat in the oven while I sliced the chicken breasts)
Place chicken breasts on top of that.
Pour wine and tomatoes on top of that

Bake at 375 for 20 minutes
After 20 minutes, sprinkle cheese on top and cook until melted cheese golden brown (about 10-15 minutes more)

I was going to tell you this interesting story I read on the internet about bell peppers and that they have 3 or 4 lobes on the bottom. Supposedly, one is a male pepper and the other a female pepper. One is sweeter (likely the female), one with more seeds (also, likely the female), and one better for cooking (likely the male, cause we all think we’re cooking all the time).

Then, to make sure Wedwand wasn’t proliferating false pepper information I did a fact check just to be sure and darn, it’s a hoax according to Snopes.

So, folks this just goes to show, don’t believe everything you see on the internet. By the way, don’t forget to post a privacy message on your Facebook status before Friday or else cyber thieves in Croatia will able to see your wall. Hahahahaha. Like the gender identification of peppers, this too is a hoax, of course.

The only fun fact I now have is that the Cheddar Gruyere (pronounced grew-yer-eye-out by the Croatians) purchased from Trader Joes was a fine selection for the cheese topping if you are looking to add a little flair to the dish.


The cover photo today is the stone that I cooked the Easy Cheesy Chicken in. It was so darned good that my family ate it all up before I could snap a picture of the actual dish. But if you try this at home, please feel free to share your photo.
